Apple crisp cookie cake

What a joy to have this cake on the table! Great for a birthday, but equally good with a coffee. The Airfryer Avance fits a tin of up to 21 cm; the Viva model, up to 19 cm.

Ingredients

  • For the sponge:
  • 5 egg whites
  • 125 g sugar
  • 125 g self-rising flour
  • For the apple crisp:
  • 100 g oats
  • 125 g flour
  • 115 g chilled butter
  • 100 g sugar
  • 1 pinch of ground cinnamon
  • 1 pinch of ground cardamom
  • 1 pinch of ground star anise
  • 4 cooking apples
  • 4 tablespoons brown sugar
  • For the topping:
  • 1 packet mini butter wafer cookies
  • 500 ml whipped cream
  • 100 g sugar

Directions

  • To make the sponge, whisk the sugar and the egg whites together in the food processor (on the highest setting) until light and airy. You know it's ready when it turns completely white and your whisk leaves a mark.
  • Sieve the flour and spoon this carefully through the whisked egg whites. Transfer the batter into a greased cake tin and bake at 150 degrees for 30 minutes until cooked. You can see whether the sponge is done by gently pressing on it. If it springs back, the cake is cooked. Place a cloth on the worktop, sprinkle a little sugar on to prevent sticking and leave the dough to cool.
  • To make the crisp, weigh out all of the ingredients and cut your cold butter into cubes. Mix the following ingredients in a large bowl; flour, apple, oats, sugar and butter cubes. Season the mixture with the ground cinnamon, ground star anise and the cardamom. Knead all the ingredients into a breadcrumb-like dough.
  • Preheat the oven to 200 degrees. Peel the apples and cut them into small pieces. Take an oven dish and fill with the pieces of apple. Sprinkle the brown sugar over the apples and mix well. Spread the crisp dough over the oven dish. Bake 25 to 30 minutes and leave to cool. You can also prepare the crisp in the Airfryer using the baking accessory. The cooking time is 20 minutes at 170 degrees.
  • Cut the sponge into three equal slices. Beat the cream with the sugar in the food processor until stiff. Now build up the cake as follows: put the apple crisp on top of the first sponge layer. Add the cream on top. Repeat this step twice. Top the cake with cream and apple. Place the little cookies in the cream.
